Boulevard Diner’s Shrimp & Grits
1 Tsp Garlic (Minced) Pinch Salt & Pepper Dash of Cajun Seasoning 6-8 Peeled & De-veined Shrimp ½ Cup of Heavy Cream 1 Tbsp. All Purpose Flour 1 Tbsp. Butter ¼ Cup Diced Red Tomatoes ¼ Cup Sliced Scallions
Step 1: Heat Sautee Pan with butter until melted & add minced garlic – being careful not to scorch
Step2: Add shrimp & continually toss until shrimp begin to turn pink
Step 3: Add scallions, salt, pepper, Cajun seasoning & flour until a roux (or thick paste) forms in pan.
Step 4: Add cream & stir to smooth out roux – let boil until sauce has thickened to right consistency
Step 5: Finally … add diced tomatoes & cook for one minute
Step 6: Pour mixture over grits – Enjoy with or without 2 crispy fried dill pickles. |
